Homemade Nut-Milk Lattes

A lovely option for that late-afternoon energy lull or brain-boosting blast of fat and flavor in the morning, these delicious homemade nut-milk and herbal blends are soothing and delicious. The ingredients in these lattes are adaptogenic herbs that are very mild and safe for everyday use but can play a part in your food first-aid kit, too.* Think of these lattes as a daily self-care ritual in rainbow hues.

Homemade Coconut-Cashew Milk

Yield: 1 quart

Ingredients

  • 1 cup cashews

  • ½ cup shredded coconut

  • 1 quart water

  • 1 teaspoon maple syrup

  • 1 teaspoon vanilla extract

  • Pinch of salt

Directions

  1. Cover cashews and coconut with water and soak overnight.

  2. Drain the soaking liquid and discard it.

  3. Add the soaked cashews and shredded coconut to a blender, along with the    remaining ingredients and a fresh quart of water. Blend for a few minutes, then strain out the liquid through a fine mesh strainer or nut-milk straining bag.

  4. Store in a glass jar in the refrigerator for 5 to 7 days.

 

Rose Cardamom Adaptogenic Latte

Ingredients

  • 8 ounces coconut-cashew milk or your favorite nut milk

  • 1 teaspoon dried rose petals

  • 1 teaspoon ashwagandha powder

  • 1 teaspoon rhodiola powder

  • ½ teaspoon ground cinnamon

  • ½ teaspoon ground cardamom

  • Pinch of salt

  • 1 teaspoon honey

  • ½ teaspoon vanilla extract

  • 1 tablespoon coconut oil

Directions

  1. In a spice grinder, blend rose petals, ashwagandha powder, rhodiola powder, cinnamon, cardamom and salt. Set aside.

  2. Heat coconut-cashew milk in a small saucepan until warm, then pour into blender.

  3. Add 1–2 teaspoons of the rose-cardamom blend (depending on your taste), honey, vanilla extract and coconut oil. Blend until creamy. Pour into a mug and enjoy!

 

Matcha Latte

Ingredients

  • 8 ounces coconut-cashew milk or your favorite nut milk

  • 1 teaspoon honey

  • ½ teaspoon vanilla extract

  • 1 tablespoon coconut oil

  • ½ teaspoon matcha

Directions

  1. Heat coconut-cashew milk in a small saucepan until warm, then pour into your blender.

  2. Add remaining ingredients and blend until creamy. Pour into a mug and enjoy.

 

Golden Milk Latte

Ingredients

  • 8 ounces coconut-cashew milk or your favorite nut milk

  • 1 teaspoon honey

  • ½ teaspoon vanilla extract

  • 1 tablespoon coconut oil

  • ½ teaspoon ground turmeric (fresh or dried)

  • ½ teaspoon ashwagandha powder

  • ¼ teaspoon cardamom

  • Pinch of black pepper

Directions

Heat coconut-cashew milk in a small saucepan until warm, then pour into your blender. Add remaining ingredients and blend well. This one is delicious with a pinch of bee pollen on top!
