Two Healthy Seasonal Summer Salads With Tomatoes & Cukes

Greek Tomato & Cucumber Salad

Servings: 4-6

Ingredients:

  • 2 medium cucumbers seeds removed and sliced into 1 inch pieces

  • 3 Roma tomatoes diced into 1 inch pieces

  • 1/3 cup red onion finely diced

  • 8 Kalamata olives sliced

  • 3/4 cup crumbled Feta cheese

  • 1/4 cup extra virgin olive oil

  • 3 tablespoons fresh lemon juice

  • 1/2 teaspoon dried oregano

  • 1/4 teaspoon each himilayan salt and black pepper

Instructions:

1.   Toss the cucumbers, tomatoes, onions and olives together in a medium bowl.

2.   Add the olive oil, lemon juice, oregano, salt and pepper and toss well.

3.   Add the Feta cheese and toss gently to coat.

4.   Cover and refrigerate or allow the salad to rest for at least 2 hours before serving.

 

Creamy Cucumber and Tomato Salad

Servings: 4-6

Ingredients:

  • 3 medium tomatoes

  • 2 medium cucumbers

  • 1/2 medium onion

  • 1 large garlic clove

  • 3 tablespoons of your favorite mayo

  • 2 tablespoons sour cream

  • 1/8 teaspoons black pepper and himilayan salt to taste

 

Instructions:

  1. Cut 3 tomatoes into 1" pieces, cut 2 cucumbers in half and slice and thinly slice 1/2 of the onion. Combine all of the prepared vegetables in a medium bowl.

  2. In a small bowl, combine 3 Tbsp of mayo, 2 Tbsp of sour cream, 1 pressed garlic clove and pepper. Mix well.

  3. Mix the dressing into the vegetables. Add salt to taste just before serving.
