Pesto: The Ultimate Green Goodness For Pasta, Sandwiches, Soups And More!

3 versions of pesto sauce. Pesto is a phenomenal combination of healthy, bright ingredients that can add the perfect touch to a meal. Great on it’s own as a bread spread or topping for pizza or a sandwich, pesto sauce can also be added to soups, pasta and rice!

Vegan Pesto Sauce

Ingredients:

• 1⁄2 tsp sea salt

• 2 cloves of garlic

• 1 tbsp pine nuts

• 1 cup fresh basil leaves

• 6 tbsp extra virgin olive oil

Directions:

1. Place sea salt, garlic, and pine nuts in a food processor or blender.

2. Add basil and blend until smooth paste is formed.

3. Place mixture in a bowl and add olive oil. Stir until mixture is smooth and creamy. Add more salt to taste.


Pistachio Pesto

Ingredients:

• 1 cup shelled raw pistachios

• 1 cup fresh basil leaves

• 1 cup fresh flat-leaf parsley leaves

• 3 garlic cloves

• 8 tbsp extra-virgin olive oil

• 3 tbsp fresh lemon juice

• 1 tsp sea salt

• 1⁄2 tsp freshly ground black pepper

Directions:

1. In a food processor, pulse pistachios until coarsely chopped. Add basil, parsley, and garlic and pulse until mixed well.

2. Slowly add oil and process until combined well. Add lemon juice, salt, and pepper and pulse until combined well.

3. Serve immediately or store in an airtight container in the refrigerator for up to 2 weeks.


Arugula Pesto Sauce

Directions:

• 2 cups fresh arugula

• ½ cup raw cashews

• 5 tbsp extra virgin olive oil

• 2 tbsp lemon juice

• 2 tbsp water

• 1 garlic clove

• ¼ tsp sea salt

• Freshly ground pepper to taste

Instructions:

1. In a food processor, pulse cashews until coarsely chopped. Add arugula, oil, lemon juice, water, garlic, salt, and several grinds of pepper and blend until creamy.

2. Serve immediately or store 2-3 days in an airtight container in the refrigerator.
